I lived in Italy for a while when I was younger where I sampled many a plate of delicious pasta with sausage and tomato sauce. It took me quite a lot of time, research and experimenting to find a recipe of my own which I liked as much, but here it is! I hope you like it as much as I do!
- 6 good quality pork sausages
- 1 jar of passata
- fresh basil leaves
- half teaspoon of sugar
- salt & pepper
- garlic (optional)
- a splash of red wine
Use your favourite sausages for this recipe, but they need to be really nice good quality sausages or it just won’t work. I like pork sausages with some garlic in them, but you can always add some extra garlic if you can’t get any of these.
Squeeze the sausage meat out of the skins and into a non-stick frying pan. Gently fry the sausage meat (you won’t need to add any oil for this). Break the sausage meat up with a wooden spoon so that it’s not too lumpy.
Once the meat is browned add a splash of red wine and let it bubble for a minute or two. Then add the passata, sugar,and salt and pepper to taste.
Let the sauce bubble away for about 20 minutes while you cook the pasta of your choice – I like penne with this.
Sprinkle with freshly shredded basil and a sprinkling of fresh parmesan.
Then serve with the rest of your bottle of wine!
