These brownies are not just gluten-free AND dairy-free, they’re also absolutely delicious!
I’m re-posting this recipe from a friend of mine, Heather – you can find her gluten-free cooking blog here – I’ve munched my way through many of her chocolate brownies whilst watching our boys play football and I can honestly say they’re the best brownies I’ve ever tasted!
Ingredients:
- 120g good quality dark chocolate (if you want the recipe to be dairy free, then make sure the dark chocolate is dairy free)
- 120g dairy free margarine (pure or vitalite)
- 200g caster sugar
- 2 free range eggs
- 1 teaspoon of vanilla extract
- 60g of sieved plain gluten free flour (I use the doves farm gluten free flour mix)
- half a teaspoon of xanthan gum (the doves flour version of this is gluten free)
Method
Turn the oven on and put it to 200 Deg Celsius
Melt the chocolate and margarine in a bowl over a barely simmering saucepan of water. Make sure the water is not touching the bottom of the bowl (you can also do this in the microwave, but make sure to melt it slowly and keep checking it and stirring).
While the chocolate and margarine mixture is melting, get on and whisk the sugar and egg together. Do this for 4-5 mins, until the egg/sugar mixture is nearly white and very thick. Do not skimp this step, and use an electronic whisk if possible.
When the chocolate mixture has melted, give it a stir and then add it to the sugar/egg mixture, along with the vanilla extract. Fold it in so it is all combined.
Fold in the sieved gluten free flour and xanthum gum mixture.
Add the mixture to a baking tin (approx 20cm x 30 cm), which is lined with non-stick baking paper.
Leave the cake to cool before taking out of the tin – and enjoy.
