I’ve quite fancied the idea of a chocolate mug cake for a while now, but just never seemed to get around to it. We were a bit desperate for a pudding tonight, so I thought I’d give it a try and I have to say it was great!
I was suspicious of a sponge cake which didn’t have any egg in the recipe (not to mention the idea of microwaving a cake) but it worked really well especially with a big scoop of vanilla ice cream melting on top…I adapted a recipe I found on Instructables.com
Ingredients:
- 1/4 cup flour
- 1/4 cup caster sugar
- 2 tbsp unsweetened cocoa powder
- Pinch salt
- 2 tbsp vegetable oil
- 2 tbsp milk, coffee or water
- 1 mini chocolate bar chopped (pick your favourite) or a few chocolate chips
- Vanilla ice cream to serve
In a heatproof mug stir together the dry ingredients until any lumps have disappeared. Stir in the oil and milk until you have a thick paste. Stir in the chopped chocolate bar or chocolate drops.
Microwave on high for a minute, checking it after 30 seconds (microwaves vary). It will be done when it’s springy on top but still a bit gooey. It took about 1 minute 10 seconds in my microwave.
Eat warm with a scoop of vanilla ice cream, then put the mugs in to soak – microwaved cake is hell to clean off
