Healthy burger recipe

This recipe is a variation from the Hairy Bikers healthy cookbook. I found their recipe was a bit wet and the burgers didn’t hold together very well when you griddled them, so I’ve adapted it a bit. They’re delicious and a lot healthier than regular burgers. PLUS you get the added benefit of sneaking some unnoticeable vegetables in too which is ideally if you have a fussy 6 year old ;)

Ingredients

  • 250g lean minced beef
  • 1 medium courgette
  • 1 medium onion
  • 4 ciabatta rolls
  • fresh basil
  • 2 nice quality large tomatoes
  • Salt and pepper

Blitz the courgette and onion in a food processor. I peel the courgette first but this is purely so that my 6 year old can’t spot anything green in there! Once they’re finely chopped add the minced beef, salt and pepper and blitz again until well combined.

Press the beef mixture into 4 large patties and heat a non-stick frying pan or griddle pan.

Griddle the burgers to taste, I do about 5-7 minutes each side.

While the burgers are cooking split the ciabatta rolls and toast them lightly, add sliced tomato, basil (and anything else you fancy, I add mustard and ketchup too)

When the burgers are cooked, stack them up and devour, delicious! What do you add to your burgers to make them extra-tasty?
