I had these when I went to my lovely baby Godson’s birthday party last month, they are delicously moreish and I just had to get the recipe! The best way I can describe them is like tangy lemon curd on a cheesecake base – lovely!
- 125g unsalted butter
- 40g icing sugar
- 40g plain flour
- 3 eggs
- 220g caster sugar
- 2 tsps grated lemon rind
- 125ml lemon juice (or to taste)
Oven 170 (moderate) Grease 23cm baking tray and line with baking paper.
Beat butter and icing sugar until smooth. Mix in 150g of the flour. Press mixture evenly into base of tin. Bake for approx 15mins until lightly browned.
Meanwhile, mix eggs, caster sugar, remaining flour, rind and juice together. Pour over hot base. Return to oven, bake for 20 mins or until firm. Cool in the pan on a rack. Chill in fridge before you cut it or it’ll fall apart! Dust with icing sugar.
