Whether you were drinking on New Year’s Eve or not, we all need something restorative on New Years Day just to make up for the late night. I had a real hankering for these Moroccan Eggs – they’re great for sharing, just dunk chunks of bread into the delicious eggy mixture and feel your mood improving!
My version was vegetarian, but you can add chorizo, sausage or bacon in there too and it would be equally delicious. It’s appropriately easy and lazy cooking for New Years day, so cook up a feast and then take your place on the sofa with a comfy blanket and get watching those New Years Day movies!
- 1 tin of chopped tomatoes
- 1 pepper (red or orange)
- 1 clove of garlic
- 3 eggs
- feta cheese
- Olive oil
- 4 tomatoes
- 1/2 tsp sugar
- Salt and pepper
If you’re adding any chopped bacon or chunks of sausage to the recipe then fry these gently for a few minutes first to start them off cooking then carry on with the recipe as below.
Gently fry the crushed garlic in a little olive oil then add the sliced tomatoes and pepper. Fry for a few minutes and then add the tinned tomatoes. Season with salt, sugar and pepper and cook for about 15 minutes until the tinned tomatoes have broken down into a sauce.
Crack your eggs on top of the tomato mixture and sprinkle with crumbled feta and let the eggs cook in the bubbling sauce for about 5 minutes.
If you like you can sprinkle with fresh coriander or snipped spring onions and then let everybody dip in!
